Project Title: Farm to Community: Mobile Gardening and Nutrition Education Initiative
Project Description:
Farm to Community expands Fresh Rx’s proven Farm to Patient and Farm to Kids programs by bringing hands-on nutrition education and food access directly into underserved neighborhoods via the Fresh Express mobile education van. Many children lack both access to fresh foods and basic knowledge of where food comes from. National data shows that 40% of children’s daily calories come from “empty calories,” while marketing heavily promotes sugary drinks and fast food. Locally, the challenge is compounded by limited access: one in six children in Palm Beach County struggle with hunger, and nearly 90% of public school students qualify for free or reduced-price lunch.
Farm to Community addresses both education and access gaps by delivering garden-based learning experiences directly to children at community partner sites. The Fresh Express van functions as a fully mobile learning unit, traveling to youth-serving organizations throughout the county, eliminating barriers such as transportation, limited space, or lack of resources for on-site gardens. Regular programming will be delivered at established partner locations including Boys & Girls Clubs across Palm Beach County, three campuses of the Fuller Center, PROPEL, and eight BRIDGES Palm Beach County sites.
At each stop, participants engage in interactive activities including planting, harvesting demonstrations, sensory exploration of fruits and vegetables, and simple cooking lessons. These hands-on experiences help children understand where food comes from, increase their willingness to try fresh foods, and build practical skills for preparing healthy meals.
The program also distributes fresh produce and starter plants so participants can apply what they learn at home. Through pre- and post-assessments, Fresh Rx tracks changes in nutrition knowledge, exposure to new foods, and confidence in growing or preparing fruits and vegetables. By removing barriers and meeting young people where they are, Farm to Community builds lifelong healthy habits and expands access to nutritious food.
